West Linn resident T.J. “Thomas” Palmrose has been selected as one of seven quarter finalists in the Mario Batali Tailgate Grilling 2008 contest. His entry in the national contest was for Tailgate Pigeon.
“I cook everyday,” Palmrose said. “And this pigeon thing, well I had a supply of pigeons so I worked with them.” A neighbor who happens to be a pigeon breeder raised the pigeons and gave them to Palmrose to use.
His recipe calls for grilling over grapewood squab, or pigeon, breasts and legs that have marinated in a mixture of ancho chiles and tomatillos. The fowl is accompanied with a sauce made of ancho and tomatillos, also.
As part of his entry, Palmrose was required to submit a three-minute video of his tailgate. Teenage neighbor Reis Mahnic, 17, filmed the video for Palmrose.
“The next step in the contest is what I need help with,” said Palmrose, who works as a respiratory therapist for Kaiser Permanente. “Contestants advance based on votes received on the Web site. I sure could use some votes from the community.” Those receiving the most votes from the public in the next two weeks advance to the semi-finals.
